In 1983, Mr. Toshio Sawai started his career as a Chef in the prestigious Kitcho Japanese restaurant in Kyoto. Following illustrious appointments at highly‐regarded Japanese restaurants in Singapore between 1990 - 2000, he took on the role of Executive Chief Chef at Restaurant Suntory at Hotel InterContinental in 2000.
In an effort to scale new culinary heights, Mr. Sawai embarked on a new challenge as Executive Chef of Japanese Dining SUN and SUN with MOON Japanese Dining & Cafe to create a new style of Japanese cuisine, blending traditional techniques with unique concepts at a reasonable price. With an unyielding emphasis on quality and a keen eye for beauty, Mr. Sawai continues to lead his team to deliver the finest dining experience for our guests' enjoyment.
